Slow Cooker Chicken Parmesan Veggie Subs
Serves: 4
Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 jar (24 oz) marinara sauce
- 1 small onion, finely chopped
- 1 small zucchini, finely chopped
- 1 cup finely chopped mushrooms
- 1 tsp Italian seasoning
- 4 whole-grain sub rolls
- 1 cup part-skim mozzarella cheese, shredded
- ¼ cup grated Parmesan cheese
Instructions:
1. Place chicken in the slow cooker. Top with marinara, onion, zucchini, mushrooms and Italian seasoning.
2. Cook on Low 6–7 hours or High 3–4 hours, until chicken is tender.
3. Shred chicken slightly and stir into the sauce.
4. Spoon mixture onto whole-grain rolls and top with mozzarella and Parmesan.
5. Broil briefly or cover until cheese melts, then serve.
