Cheesy Chicken and Broccoli

Ingredients:

  • 1 cup minute brown rice
  • 2 cups chicken broth
  • 1 teaspoon minced garlic
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 pound boneless, skinless chicken breasts
  • 12 oz package broccoli florets, frozen
  • 2 cups cheddar cheese

Directions:

  • Pour rice into bottom of slow cooker.  Add broth, garlic, salt and pepper.
  • Cut chicken into bite size pieces. Spread evenly in slow cooker
  • Evenly place broccoli over chicken breasts.
  • Cover and cook on low for 4 hours, until chicken and rice are cooked through.
  • Stir in 1 cup of cheese. Sprinkle remaining cheese on top and allow to melt.
  • Scoop, serve, and enjoy!
