Greek Style Quesadillas

Serving Size-: ½ quesadilla; ¼ cup tzatziki sauce
Quesadilla Ingredients:
- 8 (8-inch) whole wheat flour tortillas
- 1 (10-ounce) package frozen chopped spinach, thawed and drained
- 1/2 cup Kalamata olives, chopped
- 1/2 cup sun dried tomatoes in olive oil, drained and chopped
- 2 cups mozzarella cheese, shredded
- 1 cup feta cheese, crumbled
Tzatziki Sauce Ingredients:
- 1 cup plain Greek yogurt
- 1 cup cucumber, finely diced
- ½ teaspoon garlic powder
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- Salt and pepper, to taste
- 1 tablespoon olive oil
Directions:
- To make the tzatziki sauce, combine Greek yogurt, cucumber, garlic, dill, lemon juice and lemon zest in a small bowl; season with salt and pepper, to taste. Drizzle with olive oil. Refrigerate for at least 10 minutes.
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or foil.
- Top a tortilla with ¼ of the spinach, olives, sun dried tomatoes and cheeses, and then top with another tortilla. Repeat with remaining tortillas to make four quesadillas.
- Place quesadillas onto the prepared baking sheet. Place into oven and bake until the cheese has melted, about 10-12 minutes. Let stand 5 minutes. Cut prepared tortillas into quarter sections.
- Serve immediately with tzatziki sauce.
