Greek Style Quesadillas

Yield: 8 servings

Serving Size-: ½ quesadilla; ¼ cup tzatziki sauce

Quesadilla Ingredients:

  • 8 (8-inch) whole wheat flour tortillas
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 1/2 cup Kalamata olives, chopped
  • 1/2 cup sun dried tomatoes in olive oil, drained and chopped
  • 2 cups mozzarella cheese, shredded
  • 1 cup feta cheese, crumbled

Tzatziki Sauce Ingredients:

  • 1 cup plain Greek yogurt
  • 1 cup cucumber, finely diced
  • ½ teaspoon garlic powder
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Directions:

  • To make the tzatziki sauce, combine Greek yogurt, cucumber, garlic, dill, lemon juice and lemon zest in a small bowl; season with salt and pepper, to taste. Drizzle with olive oil. Refrigerate for at least 10 minutes.
  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or foil.
  • Top a tortilla with ¼ of the spinach, olives, sun dried tomatoes and cheeses, and then top with another tortilla. Repeat with remaining tortillas to make four quesadillas.
  • Place quesadillas onto the prepared baking sheet. Place into oven and bake until the cheese has melted, about 10-12 minutes. Let stand 5 minutes.   Cut prepared tortillas into quarter sections.
  • Serve immediately with tzatziki sauce.
