Join us for a dynamic look at how to turn advice into action when it comes to getting the dairy we need for good health. This year's workshop features two experts who specialize in practical approaches to meeting nutrition recommendations---including getting three servings of dairy daily.

Roberta Duyff

Roberta Larson Duyff, MS, RD, FADA, CFCS, is a  nationally-recognized food and nutrition consultant, dietitian, and author, focusing on practical, science-based food and nutrition guidance -- and promoting "the power of positive nutrition” to consumers of all ages.

In her award-winning American Dietetic Association Complete Food and Nutrition Guide  she  explains why the family table matters, with practical "food to grow on" guidance for parenting toddlers to teens.   She also is the well recognized author of 365 Days of Healthy Eating; Food, Nutrition, and Wellness and other secondary textbooks; and several children's healthy eating books including All Our Fruits and Vegetables and It's a Sandwich, for young learners.  Besides articles in national media, she has written  a weekly column for the St. Louis Post Dispatch.

Recognizing that healthy eating starts early, she has worked on many nutrition education initiatives, through US Departments of Agriculture, Health and Human Services, and Education; the National Science Teachers' Association; National Dairy Council; Head Start; among others. Locally she is an Early Start consultant and serves on the Green Tables' gardening initiative of Les Dames d'Escoffier.  

As a culinary nutrition consultant she has worked with many food trade organizations.  Her recipes appear in Cooking Healthy Across America, Cooking with Les Dames d'Escoffier: At Home with the Women Who Shape the Way We Eat and Drink, popular magazines, and food industry and websites.

Among her leadership roles, she currently serves on the James Beard Journalism Award Committee, University of Illinois' College of ACES, Department of Food Science and Human Nutrition External Advisory Committee, and the Missouri AFS (global youth exchange) Area Team -- and is past national chair of the Food and Culinary Professionals/ADA and board of the Society for Nutrition Education.

She has received national awards for her work, and currently serves on the James Beard Journalism Award Committee honoring excellence in food journalism.   Roberta earned her B.S. at the University of Illinois and her M.S. in nutrition and education at Cornell University.  She has held positions of  national leadership in American Dietetic Association and the Society for Nutrition Education-- and is committed through personal volunteerism and international travel to her global family and to global understanding through international youth exchange. 

Besides being a passionate culinarian, she loves the joy of gardening and growing her own vegetables!

Jaime Capizzi

Chef Rob Lagerlof, Prairie Farms

Chef Rob is currently Director of Technical Services/Corporate Chef for Prairie Farms Dairy, Inc. headquartered in Carlinville, Illinois.  His duties include the overseeing of production and quality assurance in eleven plants as well as providing technical service and product development functions for all 38 plants operated by Prairie Farms. He has cooked in kitchens in France, Italy, Namibia, Sweden, Iceland, Scotland and Belize.

He received a Bachelor of Arts Degree in Biology and Scandinavian Studies from Augustana College in Rock Island, Illinois.  He took his Master of Science in Biological Sciences from Illinois State University. In 2013 he completed coursework in The Culinary Arts at L’Ecole Culinaire Academie in Missouri.
